Double Layer Cheesecake Pumpkin Pie

Prep Time: 30 min
Cook Time: 40 min
Ready In: 4 hrs & 10 min

Ingredients:



·         2 (8 ounce) packages cream cheese, softened

·         1/2 cup white sugar

·         1/2 teaspoon vanilla extract

·         2 eggs

·         1 (9 inch) prepared graham cracker crust

·         1/2 cup pumpkin puree

·         1/2 teaspoon ground cinnamon

·         1 pinch ground cloves

·         1 pinch ground nutmeg

·         1/2 cup frozen whipped topping, thawed



Directions:

1.     Preheat oven to 325 degrees F (165 degrees C).

2.     In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time.

3.     Remove 1 cup of batter and spread into bottom of crust; set aside.

4.     Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully spread over the batter in the crust.

5.     Bake in preheated oven for 35 to 40 minutes, or until center is almost set. Allow to cool, then refrigerate for 3 hours or overnight.

6.     Cover with whipped topping before serving.

Garden Tip #458

Fall Dividing

Time has come to stroll through your garden and do a little clean up. Cut back plants that require it and remove trimmings to the compost pile. Check for any plants that are outgrowing their location or crowding their neighbor. To divide perennials, dig down at the dripline and lift the entire root ball out of the ground. Gently, tease roots apart or break fiberous roots. For plants with a long tap root use a shart knife and carefully slice down the length of the root. Each piece that has at least one eye, some of the tap root and some side shoots should grow. Back fill the hole with finished compost to replenish the soil. Transplant each section to the new location and fertilize with a fertilizer high in phosphorus, potassium and micro nutrients. Fall is the time to avoid Nitrogen Fertilizers because they stimulate growth. This higher phosphorus mix will encourage root growth without promoting top growth. Add Shake and Grow at a rate of 4 to 6 shakes per plant increases fertilizer efficiency. Step back and imagine the beautiful new plants that will bloom next season.

Shake and Grow creating Champion Pumpkin Growers!

Congratulations to every one of you that grew a Giant Pumpkin this year!  Charlie Brown would be proud as pumpkins keep get bigger and bigger every year!  I had a great time visiting with the pumpkin growers I had met before as well as meeting new friends at both the Elk Grove and Halfmoon Bay weigh offs.
A special congratulations goes out to Brant Bordeson, who grew the 4th Largest Pumpkin in the World this year! His pumpkin weighed in at an outstanding 1,693 lbs. Brant and Eleanor along with four other growers and their pumpkins were flown to the "Big Apple". The pumpkins were on display and carved at the Botnantical Gardens in N.Y.

Things have gotten bigger and better over the years including pies. The World’s Largest Pumpkin Pie weighed 274 lbs. in the 70's. Today’s largest pie in 2010 weighed 3699 lbs.!

Duke's Doggy Thanksgiving Tips 

  • Cooked turkey bones can be dangerous for your pup.  They can be sharp and potentially very dangerous.  You may not know that your dong has a turkey bone  lodged in their digestive system til days later.  So be careful not to leave leftover turkey out where your dog can reach it!
  • Sage and other herbs have essential oils in them that can cause your dog to get major tummyaches or even central nervous system depression!
  • We all know that chocolate is toxic to dogs....but did you know that so are ONIONS?  They can lead to a dangerous form of anemia.
  • For some reason, most doggys like to get their happy hour on!!  Do not leave alchoholic drinks in the vicininty of your pets.  Dogs and alchohol can be a bad mix.  Too much can lead to a coma or even death!
  • Last but not least:  Even though Spot or Fluffy might give you the "I am starving" eyes, avoid over feeding your pets.  Over indulging in fatty foods can lead to an upset stomach, diarrhea, or even a life threatening condition called "pancreatitis".

Summer Vegetable & Fruit Trials




We had  several different plants tested by a lab this summer and  saw an increase in the nutritional value of the fruits and vegetables treated with Shake and Grow. We will have all the results avilable in the near future for you on the website.

Thankful & Grateful

      As I was  decorating the house for Thanksgiving I  came across a project one of my kids made years ago and I thought I would share it with you. Let your family put their gratitude on display with the "Tree of Thanks".
Children can help set up the tree ahead of time. On the big day, have the
leaves available so guests can take part in the project.
What you'll need:
A small paper tree
Paper/Foam leaves
Glue
Permanent Marker
 Cut  a tree shape out of construction paper. Use purchased foam leaves or cut leaf shapes from card stock.. As guests arrive, have them jot down on a leaf what they are thankful for. Glue the leaves on the tree as they are completed. Have someone read the notes while dessert is served and let other guests try to figure out who wrote each one.

    Take time this Thanksgiving season to share with those around you how thankful you are for the many blessings in your life. I wish you all a very happy and safe Thanksgiving!

Dear gail,

      We want to take a moment to wish you a very Merry Christmas!  This is the most recent family picture of our family taken in October with the Giant Pumpkin. As our kids are growing, it is hard to get everyone together.  One was gone working and another is in the military serving in Korea. We are so thankful for the special times spent together as a family!
 
       As Christmas is approaching, one of the things that our family looks forward to is the Foster Parent Angel Tree.  We have the privilege of passing out hundreds of gifts donated by the community to foster children of all ages in our area.  The smiles on the children's faces always bring joy to our hearts! We hope that you all take a moment to count your blessings during this time of year, because Jesus is the reason for the season!

Duke Eats the Giant Pumpkin Duke loved eating some of the Shake-n-Grow Giant Pumpkin! Especially when we got the test results back from A & L Labs in Modesto CA and he found out that the Shake-n-Grow pumpkin he is eating was twice as nutritious as the untreated pumpkin.  What a yummy treat!
 
 
Hope's Pumpkin Bread Recipe                Hope's Mini Giant Pumpkin Breads
 
Pumpkin nut bread
3 ¼ cups all-purpose flour
¾ cup oatmeal (optional)
2 teaspoons baking soda
1 ½ teaspoons pumpkin pie spice
½ teaspoons baking powder
½ teaspoon salt
3 eggs
16oz. can pumpkin or 1 lb fresh
1 ½ cups granulated sugar
1 ½ brown sugar
½ cups water
½ cup vegetable oil
½ cup evaporated milk
1 cup chopped nuts (optional)

Heat oven to 350. Combine flour, oatmeal, baking soda, baking powder, pumpkin pie spice, and salt in large bowl.  Beat eggs, pumpkin, sugars, water, oil and evaporated milk in a larger bowl, put on medium speed until combined.  Beat flour mixture into pumpkin mixture on low until blended.  Stir in nuts.  9 by 5inch loaf pans.  Cook for 65 to 70 minutes.  Muffin pans cut time in half.  Our daughter Hope made these and they are extremely yummy!

5 Ways To Break Summer Boredom!!


 The summer season is about slowing down to enjoy life and cherish the simplicity of spending time with the family, a backyard barbeque, or an afternoon playing in the water!  If you planted a garden a few months ago, you are now eating fresh fruit and vegetables.  One might argue that it's in summer that we truly live a lifestyle that we long for the rest of the year! Pictured below are my daughters, Hope, Joy (who is back from the Army for a visit) and granddaughter Ellie getting the corn all ready for a family barbeque!  What an enjoyable time getting together with our kids and grandkids!
 
 
                            
 
  Our dog Duke loves the summer!  He loves chasing sprinklers, eating the leftovers that fall to the ground from the barbeque and to keep his diet balanced, he loves to eat all kinds of fruit and vegetables.  He will pick grapefruits right off of the tree, play with them for awhile and then peel them and eat the insides!  We have had to plant our tomato plants in the front yard so that he doesn't eat all the tomatoes off of the vines!

5 Things For Your Kids to Do If Bored!
1. Start a summer business!  Shake-n-Grow sales, fruit or vegetable stands, pet sitting, mother's helpers, and even yard work can teach kids business! 
2. Volunteer time reading to an elderly neighbor or young child!  Make a new friend by finding someone who would enjoy your company.
3. Start a garden!  It's not too late to plant certain kinds of vegetables.  Kids LOVE to eat what they grow!
4. Scavenger Hunt in the neighborhood!  Map out the neighborhood and look for unique or different things to add on to your list.
5. Set up an obstacle course in the backyard!  From the swimming pool, around trees, through the bushes into a large box, balancing on one foot... see who finishes first!

    Just in time for your spring garden!  California is the 44th state that Shake-n-Grow has been licensed in.  Whether it be indoor plants,  vegetables, fruits, trees or flowers you are growing, you can use Shake-n-Grow along with your favorite fertilizer to make your plants healthier!  For less than a dollar, any plant can produce much more fruit or vegetables in your garden, which means more food on the table for your family!  Since you will be growing very large vegetables and flowers, be sure to check out our contest in the article below!
Debbi DotySpring has definitely sprung.  Even here in Pennsylvania, we have had some warm days to get out and begin soil prep for our vegetable garden.  Ideally, you prepared your beds last fall, but if not you can begin now.  Start by tilling or spading the top 6 to 8 inches and work in compost.  Compost is sometimes available free from a community compost site or you can purchase it from a nursery or garden supplier.  Five percent organic matter is a good ratio.  Never work the soil or walk on it when it is wet.  If you did not do a soil test last fall, do that now.  Contact your local Cooperative Extension for details.  Do not use fresh manure, it must age at least six months to prevent risk of disease.  Work fertilizer into the soil.  I prefer organic sources for my vegetable garden, such as: fish emulsion, well composted manures, and blood meal.  You may choose to use a balanced commercial fertilizer such as 10-10-10.  Whether you are going for the prize winning pumpkin or you just want to produce the highest yield from your families vegetable garden, be sure to add two to three sprinkles of Shake and Grow on the soil once your plants have two true leaves and every 3 to 4 weeks there after.  Direct sow hardy crops such as broccoli, cabbage, Brussels sprouts and carrots now.  Transplant tender varieties such as corn, tomatoes and cucumbers after all danger of frost has passed. Alternately, you can plant tender crops outside and provide them with protection in the form of a cold frame.  A cold frame can be as simple as a large jar placed over the plant or a mini greenhouse made from some discarded windows.  Be sure the cold frame is large enough to cover without touching the plant.

 Family Favorite - Philly Gift Cakes
 
1 1/2 c. sugar
1 8oz. Philadelphia cream cheese softened
1 c. margarine
1 1/4 t. vanilla
4 eggs 
2 c. flour
1 1/2 t.baking soda
1/4 c. chopped pecans
1/4 c. chopped maraschino cherries
 
Combine sugar, cream cheese, margarine and vanilla.  Mix well until blended.  Add eggs one at a time, mixing well after each addition. Gradually add flour and baking powder, mix well. Fold cherries and nuts into pans. Bake at 325 for 1 hr and 20 min. in mini-loaf pans.

This Thanksgiving we have so much to be thankful for as we take this moment to reflect on our abundant blessings! One of our favorite family traditions is for everyone to go around the table and share what they are thankful for.  We have so many things that we are thankful for each year such as family, friends, food, and a warm home.  This year we are very thankful for our newest addition to the family, Jayden Michael Holmes!  Although he may sleep through the day, he will hear stories in years to come of favorite memories of shared Thanksgiving feasts.  One particular favorite was when our daughter Hope's birthday happen to fall on Thanksgiving day.  As everybody was crowded into the kitchen helping to make the Thanksgiving meal, accidents were bound to happen!  While making the Birthday Pumpkin Pie, somehow we ended up with a mixer malfunction (could have been an operator error on my part) oops!  Suddenly there was pumpkin pie everywhere, including the ceiling!  We have such fond memories every year that are fun to laugh about around the table.
lime jello My Mom has made this recipe has been  for many years.  It may sound crazy but it disappears fast!
 
Green Stuff
 
15 oz. or 1 can of crushed pineapple
2 boxes of lime jello
1/8 tablespoon salt
2/3 cup cottage cheese
1/4 cup mayonnaise
1/4 cup chopped pecans
 
Drain pineapple and reserve syrup.  Add water to make 1 cup of juice.  In saucepan, heat syrup to boiling.  Stir in jello, salt until jello is dissolved.  Mix at medium speed, cottage cheese, and Mayo in mixing bowl till well blended.  Mix in jello mixture, pineapple, and nuts.  Pour into a casserole dish or jello mold and chill.

Our daughter Jennifer and son-in-law Tim are the proud parents of Jayden Michael who arrived on Oct. 29, 2008 at 12:35 a.m. and weighed 6 lbs 7 oz. He joins his big brother Colby who is 6 weeks older and big sister Ellie who is 2.
